Eggplants are a favorite in Indian, Egytptian, Greek (moussaka), Italian and French (ratatouille) Cuisine. Yes some eggplants do look like eggs, especially the small white ones, however most are a purple color.
HOW TO GROW EGGPLANTS
Eggplants are sun loving (7-8hours of sun a day) and prefer a well drained humus rich soil. Plant after any risk of frost has passed, although you may start them as seedlings in a greenhouse or cold frame. Eggplants will take 2-3 months to produce full sized fruit.
If you wish to optimise conditions consider checking soil ph (5.5 - 6.8 is acceptable for eggplants). Remmeber that you need to have a moist soil, but not wet, eggplants like water, but not wet roots. Consider mulching to maintain a cool root run. Dig in lots of compost and well rotted manure 2-3 weeks before planting.
A good air flow around plants will help prevent many diseases.
